The queen devours, what she thinks is, Snow White’s heart as if it were a piece of meat, “cube steak” (48), served at a local diner. Cube steak, being a cut of tenderized beef, is not considered to be a high class. Contrarily, its commonality makes it so that it can be used in everyday recipes and normally eaten. This commonality urges Sexton’s reference of a cube steak when the queen eats the heart of Snow White. The connection between the cube steak and the heart is that, unlike a human heart, most people would have no concerns eating a cube steak due to its normalness. Here is Sexton's way of exposing how easily the evil queen eats the heart of her own stepdaughter. She carelessly devours the heart so effortlessly because of the enormous animosity she feels towards Snow White. This hatred stems mainly from the queen's envious feelings of Snow White's beauty causing her to happily consume any part of her body with such ease, specifically her heart. Secondly, being that cube steak is a low class inexpensive style of meat; most people would not eat it with the excitement of eating filet menyon. Sexton implies that the queen associates the same blasé attitude to Snow White’s life, that is why she commands the hunter to kill her, bring her heart back, and proceeds to gulp down, similar to how a carnivore would eat a burger, or vegetarian would a tofu dog, at ease and with no qualms or reservations. Overall, the queen eats Snow White’s heart easily, as if it was a tender piece of meat and has no shame because she has little regards to Snow White’s life viewing her as an obstacle to her ultimate goal. Heh--I don't think any five-star restaurant would serve cube steak, Miriam! I do like the part about how easily the queen eats the heart--it's no more to her than a cube steak. But this is more accurate/informative than the five-star restaurant. Also, cube steak is something very specific--it's literally easy to eat, too. Can you define cube steak, especially if it's useful for your explication? Finally, I really like the way you point out that this is an image of consumption (of cannibalism, even, though it's disguised as something else); however, I don't know how much of the last line actually emerges from this moment in the text; to be valid, it needs more support.
